Chicken and Veg Javanese Curry



We feel like a heavy lunch sometimes, rice with chicken and lots of vegs, so I thought I make a chicken and veg curry for the kids lunch.

Ingredients

 5 people
  1. 1/2 kg chicken breast (diced)
  2. 2 carrots (sliced)
  3. 100 gr green peas
  4. 2 lemongrass
  5. 4 kaffir lime leaves
  6. 2 bayleaves
  7. 1 tsp salt
  8. 1/2 tsp pepper
  9. 1/2 tsp sugar
  10. 200 ml water
  11. 300 ml coconut milk
  12. 2 cardamom
  13. 1 star anise
  14. 1 cinnamon stick
  15. 1 tsp curry powder
  16. 3 tbsp cooking oil
  17. Grounded spices:
  18. 1/2 red onion
  19. 5 garlic cloves
  20. 5 red long chili
  21. 2 cm ginger
  22. 3 cm turmeric
  23. 1 tsp cumin
  24. 1 tsp coriander seeds
  25. 3 candle nuts

Steps

  1. Ground all the grounded spices using a blender.
  2. Preheat a pot with cooking oil, add grounded spices, stir until well cooked, add lemongrass, kaffir lime leaves, cinnamon stick, bay leaves, star anise, curry powder, salt, sugar, pepper, and cardamom, mix them well.
  3. Add a water, chicken breast diced, wait until the chicken cooked well.
  4. Add sliced carrots and green peas, wait until all the vegetables cooked. Stir occasionally.
  5. Ready to serve with rice or the side.
