Chicken and Veg Javanese Curry
We feel like a heavy lunch sometimes, rice with chicken and lots of vegs, so I thought I make a chicken and veg curry for the kids lunch.
Ingredients
5 people
- 1/2 kg chicken breast (diced)
- 2 carrots (sliced)
- 100 gr green peas
- 2 lemongrass
- 4 kaffir lime leaves
- 2 bayleaves
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp sugar
- 200 ml water
- 300 ml coconut milk
- 2 cardamom
- 1 star anise
- 1 cinnamon stick
- 1 tsp curry powder
- 3 tbsp cooking oil
- Grounded spices:
- 1/2 red onion
- 5 garlic cloves
- 5 red long chili
- 2 cm ginger
- 3 cm turmeric
- 1 tsp cumin
- 1 tsp coriander seeds
- 3 candle nuts
Steps
- Ground all the grounded spices using a blender.
- Preheat a pot with cooking oil, add grounded spices, stir until well cooked, add lemongrass, kaffir lime leaves, cinnamon stick, bay leaves, star anise, curry powder, salt, sugar, pepper, and cardamom, mix them well.
- Add a water, chicken breast diced, wait until the chicken cooked well.
- Add sliced carrots and green peas, wait until all the vegetables cooked. Stir occasionally.
- Ready to serve with rice or the side.
